Chocolate Lava Cake Recipe

Chocolate Lava Cake is a delicious French dessert that is a combination of a chocolate cake and a soufflé. The word “lava” comes from its rich chocolate center. This is achieved by letting it bake long enough for the outside layer to crust, but not long enough for the center to fully cook. These delicate cakes are the perfect dessert to share and pairs well with vanilla ice cream or a little whipped cream.

Ingredients

Unsalted Butter | ½ cup

Bittersweet Chocolate | ¾ cups (6-ounce bar)

Large eggs | 2

Large eggs yolks | 3

Brown Sugar | ½ cups

Vanilla Extract | 1 teaspoon

All Purpose Flour | 3 tablespoons

Salt | 1 teaspoon



For Garnish (optional)

Confectioners Sugar | 1 teaspoon

Vanilla Ice Cream | As much as your hearts content

Directions

Begin by Preheating the oven to 425° Fahrenheit (about 220° Celsius). Line 6 ramekins with cooking spray or melted butter to ensure the cakes do not stick to the ramekins.

Melt the butter and chocolate separately and whisk them together once they are both fully melted. Stir in sugar until fully incorporated. Whisk the eggs and egg yolks into the batter until you are unable to see any of the whites. Stir in the flour and divide the batter equally into your ramekins. Do not overfill the ramekins, not beyond 3 quarters full, as they will overflow in the oven.

Bake until the cake has a firm texture (10 – 15 minutes). Make sure you do not open the oven at any time (as tempting as it is), until they are ready. Once out of the oven let them cool for 1 minute and they are ready to serve. Plate with a side of vanilla ice cream or a dusting of confectioner’s sugar. Enjoy!
